So reducing our consumption could have a huge impact not only on a planetary level but also for the well-being of all living beings.
In addition, this style of eating helps improve cardiovascular health by having less saturated fat and cholesterol, and by being high in fiber, helping to prevent obesity and helping to improve digestion as well as reducing inflammation.
This is how our section Let's Eat More Plants comes about, where we base ourselves on the gastronomic philosophy of Chef Alejandro Ruiz and her plant-based cuisine to recommend some recipes that are rich in flavor and planetary consciousness.
On this occasion there were 3 recipes that the Chef was kind enough to share so we could implement it in our own kitchens, where the star ingredient was once again tofu.
The first option is Mexican tofu, a dish that is a great example of how Alejandro's cuisine seeks to make anyone able to enjoy these dishes that we are already so familiar with and feel that we can prepare them on any occasion.

INGREDIENTS
1 Block of organic tofu
2 tbsp olive oil
1 tbsp turmeric
1 tbsp nutritional yeast
1 tbsp apple cider vinegar
1/4 red onion
1pc jalapeno pepper
1pc guaje tomato
1 tbsp chopped cilantro
Salt and pepper to taste
PREPARATION
Break up the tofu with your hand until it has a delicious texture and pour in the dry ingredients. In a frying pan, sauté vegetables (pico de gallo) in olive oil and cook for 3 mins. until it turns golden brown, then pour it into the tofu and cook for 3 more minutes.
Season and adjust the flavors and serve with tortillas, salsa and avocado!
In the second dish he prepared Baja Tacos where the combination of tofu coated in a tortilla, cilantro, cherry tomatoes, avocado and chipotle mayonnaise, which will be prepared later, will result in a spectacular dish that will leave you wanting to prepare it very soon.

INGREDIENTS
1/2 block of organic tofu
1/2 cup regular flour
3 tbsp olive oil
1 tsp salt
1 tsp pepper
1 tsp cumin powder
1pc tomato
1 tbsp fresh cilantro
PROCESS
1-Cut tofu into slices of the desired size
2-Pour it into the mixture of flour, spices, water and oil, incorporating until obtaining a homogeneous, smooth and consistent mixture.
3-Flour the tofu, then put it in the batter mixture and finish by dipping it in previously heated oil to fry at 160 degrees for one minute, cook and let it rest for a few minutes.
4-Prepare a quick salad with tomato, cilantro, salt and pepper.
5-Serve on a freshly made corn or flour tortilla, top with tofu, pico de gallo and chipotle sauce.
Finally: Did you know that you can prepare a chipotle mayonnaise with tofu in 5 minutes and using only a blender?
In addition to being a perfect accompaniment to the recipes you have just learned, it has a very creamy texture and is full of protein.
INGREDIENTS
1pc Organic Tofu
2 tbsp Apple cider vinegar
Salt and pepper to taste
3 tbsp canned Chipotle
PROCESS
Pour all the ingredients together in a blender, blend for a minute and your dressing is ready.
The recipes are extremely easy to prepare and will take you just a few minutes to prepare them with the mastery and expertise of the tips that the Chef advises.
