Leaving everything on the football field has an interesting parallel with the culinary world that chef Marco Cruz discovered several years ago when he exchanged the physical and emotional strain of the most beautiful sport in the world for leaving all his passion in the kitchen, which would become the highest-risk sport of his entire life.
Hanging tacos from his apron was a high-risk activity that proved to be highly satisfying for the chef who has been able to score many culinary successes throughout his career, making his way to opening his own interpretation kitchen with Nómada.
L: In your interpretive cuisine, how do you know when you've found a winning flavor combination?
M: When you find a balance of flavors that amaze you and make you close your eyes to enjoy it or raise your eyebrow.
L: Having worked in multiple restaurants, what knowledge did you acquire in your day-to-day kitchen and how did this help you develop your own concept of Nómada?
M: Without a doubt, the places that have shaped me and where I have learned to live cooking with passion and to give my own interpretation to what exists.
L: Is there something sacred/untouchable that you try to preserve about typical Mexican food?
M: Respect for the product and the flavour, as well as wanting to get the best out of the ingredient.
L: You often play with the tones of your dishes, such as “La Vie en Rose” (shrimp in a pinkish broth). What do you want to convey through your color palette?
M: For me, taste is not at odds with the visual. Playing with colors and shades is exciting. However, for me they become one goal. I cannot conceive the idea of one without the other. Transmitting emotions without a doubt.
L: What makes mushroom risotto Nómada’s signature dish?
M: The flavor and balance of the ingredients make this dish unbeatable.
L: Nomad is always moving….What can we expect from his next destination?
M: New and original creations, no doubt! Surprises!
