Proof of this is, for example, the extraordinary smoked chicken they serve there, which undergoes a 5-day preparation process in which it is slowly marinated with a deep rest so that every fiber absorbs flavor. After this comes the fire ritual where the chicken is smoked until the skin acquires a golden tone, the meat is juicy, and the very aroma of the dish announces that it is ready to be served, even from a long distance before reaching the diner's table.

Similarly, stepping into Bovine's high-temperature kitchen feels incredibly relaxed now that it's located inside Matilde, as fun details like its neon sign that reads "Need Money for Art" are touches that help lighten the vibe and allow attendees to focus on what matters most: having a pleasant time.
