Love and heartbreak are cured in pulcatas, you laugh, you cry, you enjoy and, when you know its history, you are enchanted by its mysticism.

Pulque is a Mexican drink that continues to delight palates for millennia. Along with tequila and mezcal, it is one of the most traditional drinks in Mexico, as well as being one of the oldest in the world.

Its origins position it as a nectar for the gods. In pre-Hispanic times, those who were going to be sacrificed in the temple of Huitzilopochtli were allowed to drink it until they became intoxicated. Likewise, hundreds of years ago it was the drink of the upper classes of ancient
Aztec society, who used it in celebrations and rituals.

How is it obtained? It is done manually and with exhausting dedication. The process begins when a cavity is drilled in the heart of the maguey and it is scraped so that the aguamiel flows. Afterwards, it is poured into vats for fermentation and transformation into
pulque; taking approximately 24 hours.

It is tradition and nutrition. Did you know that pulque has a wide variety of nutritional benefits? In addition, it has medicinal properties, such as: protection of intestinal flora, nutritional supplement, combats insomnia and anemia.

First stop: La Lagunilla Doña Beatriz

Let yourself be enveloped by the wind that blows through this small oasis of peace, full of nature. A place near the community of Jalpa, 35 min. from the historic center.

The star product is aguamiel and pulque, made by Doña Beatriz and her husband, who together have shared this tradition for more than 30 years!

Enjoy a spectacular panoramic view of the dam and Los Picachos, and accompany your
drink along with the best quesadillas in San Miguel.

Next stop: Pulqueria La Otomí

A small space in one of the most beautiful alleys of our city. Between an imposing mural and minimalist decoration, you will find pre-Hispanic drinks that you cannot miss, in addition to pulque as the protagonist. The pulque cured drinks are
unique combinations. Drinks such as Pozol and Tejate will refresh any traveler who passes through the doors of La Pulquería.
