María Guadalupe Emilia Ramírez Agundis is her given name, but everyone in San Miguel de Allende knows her simply as Mrs. 'Bola' Ramírez. With more than 30 years dedicated to traditional Mexican cuisine and serving thousands of events with her business Banquetes Marcela, she has earned a well-deserved place as an illustrious person who keeps local and national gastronomic traditions alive.
After a turbulent couple of years due to the pandemic, 'Bola' is getting back to catering with a vengeance, and there is not a single weekend that is without an event, especially weddings. In fact, he tells us that he once served one for up to 2,000 people, and although it was crazy, the satisfaction of sharing his flavor with people from all over the world is incomparable.
She learned to cook following in her aunt's footsteps, because curiously enough her mother did not like cooking. For her first service at that time she had to prepare chiles en nogada for 60 people and she managed to do it like the expert and professional cook that she is. Her secret? Love. For 'Bola' it is vital to enjoy and put love and affection into everything one does, and in the kitchen it is essential, it is that secret ingredient that no one else can add to the food.
Even though there is more and more competition and caterers from other places come to serve at SMA, 'Bola' is confident that there is an opportunity for everyone, and the fact that her experience and legacy have so much weight and recognition has earned her a good customer base who do not hesitate to recommend her to their acquaintances. Her specialty? She loves to cook everything Mexican, but there are two dishes that she is proud of and that people always ask for: her chiles from La Hacienda and the mole that she makes herself.
