This is Eustolia, the new restaurant in Correo 34, Centro, whose signature cuisine and high-end mixology proposal have captivated those who have tried its experiences. 

The origin of the name dates back to Greece and it is said to mean “of good origin”. If we take its etymology, “eu” from good or good and “stolos” from journey or journey, it also tells us about someone who knows how to choose their path. In addition, Saint Eustolia of Constantinople, who made a pilgrimage to the Holy Land in the year 582, is a little-known figure in the calendar of saints. Eustolia has the same air of mysticism and nostalgia. 

Let's talk about their menu, where grilled cuts stand out with a couple of seafood proposals and gourmet tacos to elevate the fine dining experience. From here, we can recommend the tuna and sea bass ceviche or the guacamole with grasshoppers as a starter; the wild mushroom soup and the truffled marrow tacos or any of their cuts such as a classic rib eye or brick steak. If you make it to dessert, order the sixtino meringue that is made at your table at the moment.

And of course, you can’t captivate diners without a strong and innovative cocktail menu. Divided into three groups: tequila + mezcal, soft drinks, and gin + carajillos, what we like about this proposal is the twist and personality that they have given to each drink. For example, there is the “Rambutan,” a mix of Casa Dragones white with agave honey, strawberries, basil, lychee, and prosecco; exquisite. There is also “The New Black,” one that looks set to become the favorite drink of many and the signature of the restaurant: rum, coconut, mango, lemon, orange reduction, and cardamom. It is definitely worth trying each one at your own pace with the excuse of returning.
