EVERYONE LOVES CHILAQUILES: Our San Miguel favorites and where to find them

They may not be on the calendar, but chilaquiles Saturdays are a national holiday that comforts us and welcomes us to the weekend every week. Sure, this typical Mexican dish can be eaten every day and at any time, but there is something about eating them on the weekend, especially for breakfast or lunch, that makes them even more special. Green or red? Plain or with egg? Chicken? The ways to try them are endless, and there are as many tastes as there are colors. 

So on a mission to help you discover new places with winning chilaquiles, we've put together this list of our favorite restaurants and spots. Mind you, we're aware that there may be many more we've yet to discover, but of the ones we've tried, these turned out to be the best for the staff. THE CLASSICS

 

There are places that the years don't pass by, on the contrary, they help them to consolidate themselves as an icon recognized by locals and foreigners alike; restaurants that have welcomed several generations with the warmth and quality of the first day of service. Local or foreign, you have surely eaten in these restaurants, and if not, you are missing out on their wonderful menus of traditional Mexican cuisine. 

 

The Mail

A must for breakfast, although you can also visit it at other times of the day. With a varied menu to please everyone, an enviable location and a waiting list that is not so long but can be avoided by arriving early or going during the week. This cozy restaurant has chilaquiles as its house special, and you have two options, well actually three: red, green, flag (tricolor), with or without chicken or meat; that's right, simple and to the point. 

 

Parish Coffee

A small patio that almost everyone knows, with a fountain in the center that takes us back to the times when this house saw its greatest splendor. Its wide space makes you feel comfortable, especially if you go with friends to chat or even just to read with your breakfast and coffee. As for their chilaquiles, you can of course order them green or red, baked, with egg, with chicken or with roast beef for the hungriest. 

 

The Miracles

A classic with a very casual atmosphere that never fails. Yes, you come here to get stuck with their molcajetes and a couple of beers, but that's for lunch. If you get up early enough, you can get their breakfasts, which offer everything that Mexican cuisine can't be without, like enchiladas and eggs any way you like. When it comes to their chilaquiles, things are simple but exciting: green or red, with egg, chicken, with skirt steak or with cecina; it depends on your craving and hunger.

 

THE FASHIONABLE ONES 

If you're into visiting and trying out the trendiest places, we also have the ideal options. These cafes and restaurants have been on everyone's lips as a must-visit in San Miguel, so you may need to be patient to find a table, especially if you come on the weekend. But trust us, it will be worth it. 

 

Lavender Coffee

Their specialty is coffee in its different methods, beans and presentations; in fact, their concept is that several of their drinks are infused with lavender, which gives them a special touch compared to other coffee shops. And as a good coffee shop, they have an extensive breakfast and lunch menu, among which are their chilaquiles, which are very good because they put beans in them and include a side dish that can be egg, bacon or veggie (avocado and radish), all in a super cute little casserole that makes them very Instagrammable. 

 

Inside Café

Small, cute and with a lovely terrace overlooking the street. It is always a good idea to visit this cafe because the atmosphere is very casual and relaxed, and now that it is extremely hot, an outdoor space is always appreciated. On their menu there are “conceptual” breakfasts and lunches, you have everything from “Big Wild” to “The Sexy Breakfast”, but something that you will fall in love with are their classic chilaquiles, which are accompanied by beans, avocado, cherry tomatoes, cilantro and two fried eggs to keep you going until dinner, or the vegan option that is lighter and guilt-free.

 

Cumpanio

Before you start your morning walk through the Centro, we highly recommend stopping by this cozy cafe that stands out for having the best sweet bread you'll try in San Miguel. Just get there early because around 10 am you'll have to get on the waiting list. If you want a good lunch to fill you with energy, you can order the chilaquiles with a fried egg, or with grilled chicken, or the classic green or red ones with just their cream and ranch cheese. 

 

THE NEW ONES 

Even though we have our go-to spots, there is always something new to try or do in San Miguel and that is part of its magic as a tourist destination. And among the most exciting things that open their doors are, of course, the restaurants and cafes. Here are 3 of our recommendations of relatively new places that have captured our attention and our palates. 

 

Poppy Coffee

A dream place that welcomes you with a very cute bar where you can order your favorite coffee, and that you can take to the patio, which is one of our favorite spots to disconnect from life for a while. The pancakes and waffles are a must, but if you are looking for something more complete, like some good chilaquiles, you better order the house ones, which are very well served with avocado, red onion, a touch of cilantro and enough cheese to satisfy you. 

 

Roots

This new restaurant on the way out to Celaya has won us over because its atmosphere is ideal for breakfast, and each dish looks and tastes amazing. In addition, part of its concept is to rescue traditional Mexican flavors in an artisanal way. One of its specialties is chilaquiles filled with pressed pork rinds! This had to be on our list. 

 

Allende's Waffle Shop

We love coming to La Wafflería, of course, for all kinds of waffles and churros, but suddenly it's cool to change things up and come for a more complete, spicier breakfast, like their variety of chilaquiles that are just as good as any other. You can order them with chipotle cream (super like), cilantro cream (also super like) or traditional red ones that always deliver, and as an extra you can add egg, plus they serve them with beans and an American coffee, perfect combo!
