ON THE COVER with MIKE LICONA and the unforgettable coffee of Norte Uno Tres

For the first time, Local Guide launched a contest to determine which figure should be ours. the Cover of the last month of the year and after a fierce battle he won Mike Licona the founder and Creative Director of specialty coffee North One Three.

And for coffee lovers it is impossible not to visit this renowned coffee shop where they pay the utmost attention to taking care of all the links in the coffee traceability chain, which means knowing everything about the product from its processes, the producer, the farm and the varieties they acquire to know what type of grain and quality is handled in their bar, which differentiates it from a commercial coffee shop.

This project was born in the unusual time of the Pandemic when all the coffee shops were closed in Ciudad Juárez, Chihuahua and that is where they saw the need to deliver bags of coffee to homes and cold brew to ensure that consumers never suffered a shortage of such a beloved element.

The name of the project, which one might think could have something to do with numerology, is wrong because, as Mike explains, it came from biblical references, since in the Bible verse 1: 3 it reads as follows:

He will be like a tree planted by the streams of water,
That yields its fruit in its season,
And its leaf does not fall;
And whatever he does will prosper.

For Mike, this biblical quote means that the man who trusts in God will never be abandoned and will be destined for prosperity. On the other hand, the North part refers directly to his geographical origins in the country and is a way of saying that even though we are lost, we are capable of looking to the sky and finding the north to find ourselves.

After the pandemic ended, the coffee shop opened its doors in Chihuahua and two years later, in San Miguel, where they have been warmly welcomed by the citizens and by LocalGuide, who made an honest recommendation to visit Norte Uno Tres as the best option for coffee just a month after they arrived.

And besides being a café, they have also known how to adapt to the San Miguel lifestyle and its climate. Proof of this are two specialty drinks they have created, one for the cold season “El Norteñito” and another for the hot season “La Bruchata”.

The Norteñito is good for the cold because it is the perfect balance between the bitterness of the coffee and the sweetness of the condensed milk combined with the textured milk that has made it one of the biggest sellers on their menu.

For the hot season, the innovative guys created “La Bruchata” which combines Mexican elements such as cinnamon-based horchata water and rice pudding with coffee, making it ideal for escaping the hot days of San Miguel.

Positioning itself as the favorite of the coffee-loving public has been due in large part to Mike's vision, who equates calibrating his espresso every morning with musical art when musicians tune their instruments before a concert, only here aromatic notes with the smell of coffee come out.
