Welcome home CHEF MATTEO SALAS

“Don’t let him go!” or “Take away his passport” were some of the comments that locals from San Miguel left in the comments of the IG post on social media. Aperi upon learning that Chef Matteo Salas will be back for a limited time and with good reason.

The Italian-Mexican chef had a brilliant career in Europe working in restaurants and with multi-award-winning chefs with honors such as Michelin Stars. His culinary journey brought him to the streets of San Miguel and in 2014 he opened the Aperi restaurant located in the courtyard of the exclusive Hotel Boutique Dos Casas.

The good seasonings soon spread and word quickly spread about the new restaurant, whose style featured a fusion of various parts of the world such as Japan, Mexico, Italy and France.

Taking inspiration from the passion for ingredients of the great Andoni Luis Aduriz, Matteo did the same at Aperi, quickly positioning itself as the place where food lovers would definitely go. 

Many cite Salas' creations as the beginning of the must-visit gastronomic destination that San Miguel de Allende has today. Thanks to creations such as duck with smoked cherry, cherry with tonka bean and artichoke puree, his unforgettable glazed octopus and not to mention the pastry area with his burnt sweet potato with burnt cream whipped over vanilla ice cream from Papantla.

Matteo's style was difficult to describe but if there was one thing that was constant it was change, as his menu was constantly rotating depending on the local, seasonal ingredients from San Miguel that he could play with and make the protagonists of his creations, such as Eringui from San Miguel and 100% organic beef from Cañada de la Virgen or free-range Wagyu or Acamaya from a farm in our city.

It was during his years in the kitchen at San Miguel that the man who would become the current Chef of Aperi, Jesús Vazquez Reyna, joined him and became his apprentice, quickly rising to head chef and embarking on his own path in the culinary world and thus achieving his goal of being able to make people enjoy his creations as much as he does.

After this great prelude, we at Local Guide are pleased to announce, after several years of absence, the return of Matteo Salas to the Aperi kitchen for a Takeover exclusive during the days from July 6 to 8.

He will be cooking a 5-course menu alongside Chef Jesús Vazquez in what will undoubtedly be the unmissable culinary experience of the year in San Miguel de Allende. To top it off, he will be joined in the kitchen on July 8 by a passionate fan of the power of smoke in gastronomy: Juan Emilio Villaseñor himself from La Cocinoteca.

An occasion that will be unlikely to be repeated and in which we are certain that each course on the menu will consist of a very special culinary journey.
