The history and legacy of more than 40 years that the Real de Minas hotels have in Guanajuato is undeniable. Those of us who were born and raised in the state perfectly identify its name and facilities as synonymous with hospitality, comfort and tradition (especially family-friendly): it is the classic hotel chain that will always be there for us.
Thinking precisely about distinguishing themselves and offering new experiences, for a few months now they have been working on an ambitious project around their restaurant and kitchen, with new chefs and creative staff willing to bring their best ideas to the table. It involves the total renovation of their breakfast, lunch and dinner menu, with the integration of new dishes, new flavors and preparations, all with the special seal of Real de Minas. The challenge has been great, but the satisfaction of their guests and invitees will be even greater.
Chefs Diego Armando Escobar and Luis Gerardo González told us details of what we can expect to find on their new menu starting in 2022, which will include a pool bar with cocktails and the perfect drinks to order from the pool.
For breakfast, one of their proposals is to reinterpret the iconic French Croque-monsieur sandwich in the Real de Minas style, that is, with a cheese sauce that highlights the flavor of the protein and adds texture to the crunchiness of the freshly baked bread; accompanied by house potatoes and a special assembly.
For lunch and dinner, the diversity of proteins is the star. One of the dishes we most want to try is the salmon with smoked sweet potato puree; an explosion of flavors because it is cooked just right, served with corn strips and edible bougainvillea from the hotel's garden (washed and disinfected, of course), bathed in truffle oil to make the salmon even juicier. They will also have select cuts of beef to suit diners' taste, grilled and accompanied by grilled vegetables; all in harmony with trying one of the featured red wines on the menu. And for lovers of Italian cuisine, the new kitchen at Real de Minas SMA is preparing artisanal pastas with proteins such as fresh shrimp, with its faithful breadsticks with parmesan and garlic also made in the restaurant.
One of the innovations is the diversification of dishes to pamper guests and diners and cover each of their cravings, as it will have stations or 'islands' that will have different preparations: from the salad and healthy food station, to the Mexican station with snacks from all over Mexico, and of course, a dessert station to close with a sweet experience.

What better than two unmissable celebrations to kick off this new menu at your restaurant? You and your loved ones can be the first to try the reinvention of flavors at the Real de Minas hotel. To do so, they have prepared two memorable nights with a December buffet, an open national bar, live music, grapes and toasts for New Year's Eve.
Under its new seasonal concept, you can enjoy typical seasonal dishes but with a twist proposed by chefs Diego and Luis Gerardo. For example, a supreme of poultry stuffed with red fruits and cream cheese, which is a complex recipe to prepare and very delicious. Or how about the traditional turkey breast with a Christmas stuffing made of chard, olives and more seeds, accompanied by a red wine gravy that makes the turkey even softer and juicier.
The Mediterranean menu features house salads such as apple salad, pastas such as spaghetti, lasagna, rustic mashed potatoes and a Valencian paella for those who prefer to celebrate with more intense flavours. And for dessert, there are apple tarts with vanilla ice cream, brownies, red berry cheesecake and rice pudding with pistachios, a family recipe from the chef.
