Saint Michael Allende owes much to being considered a gastronomic destination site to the cuisine of Aperi which was curated by the legendary Italian Chef Matteo Salas who was characterized by his excellent kitchen management, for prioritizing raw materials and for his mastery in both sweet and savory dishes.
This is why such mastery of the kitchen attracted the Chef Jesus Vazquez Reyna who started out as a cook in Matteo's kitchen and thanks to his talent he advanced to become his Head Chef and became a great friend.

After finding his own path and mastering his culinary art, Jesús Vázquez Reyna returns to the kitchen of Aperi to lead it and make it not only the best restaurant in San Miguel, but also the favorite of diners.
To achieve this, it is based on a simple and minimalist premise, leaving aside pretentious concepts: “I serve what I would like to eat, and if I like it, then so do people.”


It is their mission to preserve Aperi's love of high-quality local ingredients, which is why the restaurant's menu Two Houses It remains small by not wanting to be forced to have an extensive menu and for some reason a dish goes out of season and having to offer the diner something that is not of excellent quality.
The same reason why Aperi's menu is constantly changing is because of its passion for the freshest and best-sourced ingredients as well as the best cooking methods available for the menu that makes the most of its qualities.
Another of Chef Jesus' strong points is his exquisite presentation when plating. For him, "less is more" applies at all times because when the dish has a smaller portion, there is less room for error and a greater opportunity to achieve aesthetic and gastronomic perfection.

Foie gras with xoconostle, white mole with plum, risotto and beautifully presented desserts are some of the proposals that the master chef has brought to the Chef's Table at Aperi.
When cooking, the Chef is very consistent with his minimalist thinking and says that when creating his dishes, it is not something he plans in advance to have a particular style, but rather it is how the dishes and inspiration spring from his being, which will undoubtedly make Aperi stop being “the best” and transcend as Everyone's Favorite.
