When we found out that the fire kitchen was changing its headquarters to be located in the Hotel Matilda, it seemed like the most natural step in the world. <\/p>\n\n\n\n

Our reasoning was as follows: Matilda<\/a> It is known for its support of extraordinary culinary talent and being the concept of Bovine<\/strong><\/a> So beloved by all who visit San Miguel was a pleasant surprise.<\/p>\n\n\n\n

Under the premise of "less intervention, more intention" is the guiding principle of Bovine's cuisine, directed by Chef Juan Carlos Hern\u00e1ndez, whose ability to transform ingredients into fascinating dishes never ceases to amaze us.<\/p>\n\n\n\n

Proof of this is, for example, the extraordinary smoked chicken they serve there, which undergoes a 5-day preparation process in which it is slowly marinated with a deep rest so that every fiber absorbs flavor. After this comes the fire ritual where the chicken is smoked until the skin acquires a golden tone, the meat is juicy, and the very aroma of the dish announces that it is ready to be served, even from a long distance before reaching the diner's table.<\/p>\n\n\n\n

Similarly, stepping into Bovine's high-temperature kitchen feels incredibly relaxed now that it's located inside Matilde, as fun details like its neon sign that reads "Need Money for Art" are touches that help lighten the vibe and allow attendees to focus on what matters most: having a pleasant time.<\/p>\n\n\n\n

Another of our favorite dishes comes from the smoked kitchen with Tomato, Peach and Burrata whose color, creaminess and freshness in a single bite make us feel insatiable and want to ask for more and more.<\/p>\n\n\n\n
